Almond biscuits recipe

 


INGREDIENTS


150 g of caster sugar

125 grammes of softened unsalted butter

1 egg

0.5 teaspoons of vanilla or almond extract

1.3 cups (200 g) of white flour

A half-teaspoon of baking powder

70g of almond meal

1/8 teaspoon of ginger root

1/8 teaspoon cinnamon powder

a forty blanched almonds


METHOD


1. Set the oven to 180 C degrees.

2. Place the butter and sugar in a bowl and, using an electric mixer, beat the mixture for three minutes, or until it is pale and creamy.

3. Continue beating until smooth after adding the egg and the almond or vanilla extract. With a knife or spatula, gradually sift in the flour, baking powder, and salt. Without overmixing, add the almond meal, ginger, and cinnamon.

4. Place a teaspoonful of the dough on a baking sheet that has been coated with greaseproof paper. Put around 15 cookies on the baking sheet. Place an almond on top of each one, lightly press it down, and bake in batches for 10 minutes, or until lightly brown, in the centre of the oven. The biscuits will crisp up as they cool if you move them from the paper to a wire rack. Place in an airtight container once cool.
